In a bowl, combine all of the dry ingredients and set aside.
The bone should be removed from the chicken thighs.
Pat the chicken pieces dry on a chopping board.
Coat the top and underside of the skin with the seasoning mixture. Put 1/2 spoonful of butter under each thigh’s skin as well.
Rub the rest of the seasoning mixture on the backs of the thighs.
Place thighs in a skillet with coconut oil/ghee over medium-high heat with the skin facing down.
Cook for about 10 minutes, or until the skin is crispy, then flip and cook for another 10-15 minutes, or until the chicken is thoroughly done.
