Lemon Fried Chicken
- 2 tablespoons olive oil
- 2 cit 2 cit (a lemon juice, a slice of lemon)
- 1 tablespoon Italian herbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika powder
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 1/2 red onion, sliced
- 3 pounds chicken breasts (thighs can also be used)
- Fresh rosemary, optional

Preheat the oven to 400 degrees.

Mix olive oil, juice of one lemon, Italian herbs, garlic powder, paprika, red pepper flakes, salt and pepper.

Rub the chicken breasts with the mixture and place them in a baking dish. Garnish with lemon slices, chopped red onion and fresh herbs such as rosemary or thyme, if desired.

Bake, covered, for 35-40 minutes, until the internal temperature reaches 165 degrees and the juices run well. (Note: you can also use skinless chicken bones – just add 15-20 minutes of cooking time).

Garnish with fresh herbs if desired.
