This keto roasted chicken recipe is a great way to get all the benefits of a keto diet without all the carbs. What is a keto diet? A keto diet is low carb, a diet in which  you eat a lot of fat, but it is not a high fat diet. It is also not a low carb diet, since by restricting carbohydrates you can still have plenty of carbs in your diet. Although you are not allowed to eat carbs, you are allowed to eat fat, which is what gives you the energy you need. Without too much fat you can not get the energy you need, but with too much fat you get the same results as if you eat a lot of carbs.

Lemon Fried Chicken

  • 2 tablespoons olive oil
  • 2 cit 2 cit (a lemon juice, a slice of lemon)
  • 1 tablespoon Italian herbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika powder
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 red onion, sliced
  • 3 pounds chicken breasts (thighs can also be used)
  • Fresh rosemary, optional

Preheat the oven to 400 degrees.

Mix olive oil, juice of one lemon, Italian herbs, garlic powder, paprika, red pepper flakes, salt and pepper.

Rub the chicken breasts with the mixture and place them in a baking dish. Garnish with lemon slices, chopped red onion and fresh herbs such as rosemary or thyme, if desired.

Bake, covered, for 35-40 minutes, until the internal temperature reaches 165 degrees and the juices run well. (Note: you can also use skinless chicken bones – just add 15-20 minutes of cooking time).

Garnish with fresh herbs if desired.

Chicken breasts and legs can be used if desired. Can also be served with additional roasted vegetables. I steamed this chicken with roasted Brussels sprouts and a big salad. Such a simple and tasty dish! Enjoy it.
