Here you go, another solo recipe.  What’s different about this one, is that I’m doing the entire recipe, from prep to cooking, and I’m doing it all at once.  This is a recipe I created back on January 3rd, and it’s one of my favorite recipes.  So, I thought I’d share the recipe with you all.  This is a great meal to prep in advance, and then just toss everything in a pot and have it ready to go in 15 minutes.

Cashew Chicken: A Step-by-Step Guide

This simple cashew chicken dish was inspired by a number of sources, the most notable of which are you, our viewers, who have requested more Asian foods, and Thai Spice, a restaurant Matt and I used to visit in San Francisco. Thai Spice is a must-visit for anybody seeking for an excellent Thai restaurant near Fisherman’s Wharf. The beauty of this dish is how complicated its flavor profiles seem to be, yet how easy it is to prepare at home. There’s no need for a special wok or unusual ingredients! Cashew Chicken with Low Carbs

 When Matt is gone, I usually spend the whole day and night in the kitchen putting together odd ingredients in the hopes of creating a winning dish. However, I got an image in my head the last time Matt went home. A vision with an Asian influence. Viewers have made many requests for Asian dishes, so I realized that one recipe would not enough. I wanted to take a weekend trip to really study the tastes of Asian food and try my best to recreate some of the classics in a ketogenic manner. This quick cashew chicken stir fry is the first of many to come! The first dish I chose to recreate was Chicken with Cashews Made Simple. I was able to effortlessly replicate the strong, complementing tastes in this meal while missing him and reflecting on our time together in San Francisco.

You can eat it on its own or over cauliflower fried rice (which is what I did). As with typical asian take-out, the sauce that covers the chicken, cashews, and veggies will soak into the rice. Chicken with Cashews Made Simple

This simple cashew chicken dish will become a family favorite in no time!

25-minute total time

3 person serving

Calories in a single serving: 333.3 kcal

15-minute prep time

Time to prepare: 10 minutes

Instructions:

  • Toast the cashews in a pan over low heat for 8 minutes, or until they are lightly browned and aromatic. Remove the item and put it away.

  • Chicken thighs should be diced into 1 inch pieces. Cut the onion and pepper into similar-sized pieces.

  • Increase the heat to high and pour in the coconut oil.

  • Once the oil has reached the desired temperature, add the chicken thighs and fry until done (about 5 minutes).

  • When the chicken is completely cooked, remove it from the pan. Season with pepper, onions, garlic, chili garlic sauce, and salt and pepper (ginger, salt, pepper). Allow to cook for 2-3 minutes on high.

  • Combine liquid aminos, rice wine vinegar, and cashews in a mixing bowl. Cook on high heat until the liquid has reduced to a sticky consistency; there should be no extra liquid in the pan after cooking.

  • Serve in a dish with sesame seeds and sesame oil drizzled on top. Enjoy!
