Keto dieters often enjoy pesto sauce with their pasta, but many of the recipes are difficult to make with the limited amount of ingredients they offer. You can get the same flavor with a simple keto pesto, but it’s made with more delicious ingredients, such as nutritional yeast, olive oil and avocado.

A Creamy Pesto Sauce that’s Easy to Make!

I used to think that the only way to have a wonderful creamy pesto was to buy it or order it from a restaurant. I didn’t know how simple it is to prepare and how wonderful it is for adding fat to meals until I was on a keto diet! Fresh basil, olive or avocado oil, and salt and pepper are all you’ll need! After that, add some nuts of your choosing, such as walnuts, and some grated Parmesan to your basil pesto! Blend everything together and keep it in the fridge as a delicious fat bomb to add to your evening meals! We also like to use it on top of our Chicken Crust Pizza as a sauce.

Selecting Low-Carb Pesto Ingredients

Basil pesto is one of those keto recipes that is very adaptable and can be made with a variety of ingredients. We offer a number of ingredient choices to pick from, whether you’re on a budget or just want the finest taste pesto.

Fresh basil, pine nuts, parmesan cheese, and extra virgin olive oil are often used in pesto recipes. However, just because something is conventional doesn’t mean you have to utilize it. Other herbs such as coriander, parsley, chives, and cilantro may be used to create a delicious pesto. The important thing to remember is that each plant has a distinct taste character. It’s possible that your pesto will pair better with a different kind of meat than the conventional version. A pesto dish with cilantro, for example, would definitely go better with a Mexican steak.

While it may be tempting to save time by using pre-made garlic, Italian dishes need that additional touch of fresh taste. Purchase new garlic gloves, and if you despise peeling garlic, try this food-safe rubber garlic peeler. If you use a lot of garlic in your keto meals, you’ll save a lot of time.

Pesto’s most significant component is definitely oil. It helps to thin down the herbs and creates a creamy sauce. Because you’ll be eating a lot of oil in each serving, a good pesto should include high-quality oils. You want the health benefits as well as the taste of healthy oils to be there. For this dish, we recommend a peppery, strong Spanish or Italian olive oil. If none of these oils are available, a neutral tasting avocado oil may be used. We advise against using sunflower oil since it is rich in omega 6 fatty acids and has been linked to inflammation (1).

Cheeses with Low Carbohydrate

The one thing you won’t want to alter in this recipe is the parmesan cheese. It gives our pesto a wonderful nutty and salty taste that few other cheeses can match. If you can’t get parmesan, a salty aged pecorino cheese is the next best thing. Pecorino has a comparable texture and flavor to parmesan cheese, despite the fact that it is a considerably drier cheese.

If cheese is the least adaptable food, nuts are the most adaptable. The number of nuts that may be used in low carb keto pesto recipes is really limitless. Although we like walnuts, a classic pesto recipe calls for pine nuts. Pine nuts have a wonderful taste, particularly roasted pine nuts, but they may be very costly. Basil pesto may also be made using macadamia nuts, brazil nuts, or cashews if pine nuts aren’t in your budget. Each has a slightly distinct taste profile, but they’re all excellent low-carb alternatives.

Chicken Breasts Baked with Ease

The juiciest low carb chicken breasts come from baking them in the oven! Cooking chicken on the stovetop or in the microwave, particularly chicken breast, may rapidly dry it out. Dry chicken is very chewy, making it difficult to eat. Cooking all meats in the oven, on the other hand, ensures a juicy piece of meat! We usually sear our low carb meats on the stove top before finishing them in the oven to prevent the meat from drying up and losing all of its fluids. If you don’t trust us, try our roasted red pepper chicken thighs!

How to Make Pesto Chicken on a Keto Diet

A nice basil pesto will always boost your protein and create a tasty keto dinner. All you need for this keto pesto is olive oil, herbs, parmesan cheese, and pine nuts. So, let’s get our supplies and put it all together!

Fresh basil or other herbs of your choosing are required for your keto pesto. Another interesting herb choice is parsley or coriander. You’ll also need parmesan cheese, salt, and pepper, as well as garlic. Finally, choose a high-quality oil, such as olive or avocado oil, as well as some almonds. Walnuts are traditionally used, although pine nuts or cashews may also be used.

Juicy Chicken in the Oven

A roasted low carb chicken breast is required for the ideal keto basil pesto dish. Preheating the oven to 450 degrees is the first step in making our gluten-free keto roasted chicken breast. If you want a more uniform thickness, gently pound the chicken breasts. Set aside after drying with paper towels.

Fill a 9×13 baking dish halfway with oil. Toss the chicken breasts in the oil to coat them, then arrange them in the dish side by side. Combine the salt, pepper, onion, and garlic powder in a mixing bowl. To seal in the oil and spices, sprinkle the mixture over the chicken and massage it in with your hands. Bake for 15-20 minutes, uncovered, or until a meat thermometer registers 160-170 degrees.

How to Make Keto Pesto

To create this pesto keto dish, start by putting all of the pesto sauce ingredients in a food processor and pulsing them until smooth. To figure out what you’ll need, look at the ingredient list above (hint: fresh cracked black pepper is a necessity!). Add additional olive oil to the food processor and mix again if you want a thinner sauce.

Serve your meat with a dollop of keto pesto as soon as the basil pesto is ready and the chicken is done. (Each 6oz chicken breast yields approximately 1/4 of the keto basil pesto recipe.) Because keto pasta or zucchini noodles are low in carbohydrates yet ideal for a simple foundation, we like to serve it on top of them.

Pesto made with fresh olive oil and stored in the refrigerator

We store this gluten-free keto pesto in the fridge in a mason jar. It will keep in the fridge for approximately 7 days, but it’s so delicious, like all of our other keto recipes, that you’ll probably eat it all first!
