The Poundcake (Heady Club), popularly known as a London Pound, is a griddle pancake consisting of a pound cake layer with a pancake-like batter and a topping of fruit jam. The pound cake layer can be made of any cake mix or prepared from scratch. The pancake-like batter can be made with any pancake mix, but typically includes a milk-based mix, egg or egg substitute, and oil. Traditionally, the pound cake layer has been made of butter, but non-fat or low-fat or substitute oil can be substituted. The topping of fruit jam is optional.
I’ve been on a mission to find a new London poundcake recipe. Just because I’ve lived in London for the past few years doesn’t mean I’ve been able to find one that tastes right. I’ve tried a lot of different ones, but they’ve all been disappointing.
When I visited the Heady Club in London last week, I was struck by how luxurious it was. The club’s founder, Joe Fox, is an MD and a former banker. He had an eye for detail and the decor was impeccable. After the tour, I settled down to a glass of port and a piece of their award-winning poundcake. I was then surprised to be told that if I wanted to make a donation, I would receive a special gift.
