When it comes to Christmas I always have a big, festive meal. However, I have not always used the same recipes. For everything from cranberry sauce to prime rib and even a turkey I have tried and failed. I would make it one year and it would look fine on the table but no one would want to eat it. I tried to find a recipe for the kind of meal I wanted to make and without success. This is a recipe for a tasty, healthy, and easy meal. It has a lot of flavor from the use of the chicken, sausage, and the cheese soup. The recipe is easy to follow and the results are fantastic.

Buffalo Chicken Soup Recipe

This warm and cozy dish is the perfect choice for a cool evening.
- 2 tablespoons butter
- 4 ribs of cell in tran
- 1/2 onion, finely chopped
- 3 cloves of garlic, finely chopped
- 6 cups chicken stock
- 2 tablespoons ranch dressing mix
- 2/3 cup free-range sauce
- 1 cooked Camelina chicken, cut into pieces
- 3 cups cheddar cheese
- 2 cups heavy cream
- Blue cheese for garnish, if desired*.

Sauté the celery, onion and garlic in the butter over the heat until soft and translucent.

Add chicken broth, roasted vegetables, ranch dressing mix, hot sauce and shredded chicken to pot. Bring to a boil on the stove for 15 minutes.

Reduce heat and add cheese and cream before serving. Stir to combine.

Serve with crumbled blue cheese if desired.

For simplicity, we used a pre-roasted chicken, but you can always use leftover chicken or cook the chicken specifically for the soup. You can even cook this dish in a pressure cooker!

Frank’s spicy sauce balances out the amount of heavy cream. However, if you fear the soup is too spicy, you can just add a little spicy sauce, depending on how spicy your family wants it to be.
