Chicken Nuggets on a Keto Diet
Healthy chicken nuggets seasoned with red onion and cilantro and cooked in coconut oil.

Instructions:

Pulse the chicken breast 3 to 4 times in a food processor.

Pulse in the onion, bell pepper, and cilantro until everything is mixed.

Add the other ingredients and process for approximately 30 seconds, or until everything is completely blended.

Heat 1/2 cup coconut oil in a medium cast iron pan over medium high heat.

Once the oil is hot (about 330-350 degrees F), scoop out part of the chicken nugget mixture with a cookie scooper and put it into the hot oil. With a spoon, flatten gently. Make sure the skillet isn’t too full.
