Chicken Nuggets on a Keto Diet

Healthy chicken nuggets seasoned with red onion and cilantro and cooked in coconut oil.

Instructions:

  • Pulse the chicken breast 3 to 4 times in a food processor.

  • Pulse in the onion, bell pepper, and cilantro until everything is mixed.

  • Add the other ingredients and process for approximately 30 seconds, or until everything is completely blended.

  • Heat 1/2 cup coconut oil in a medium cast iron pan over medium high heat.

  • Once the oil is hot (about 330-350 degrees F), scoop out part of the chicken nugget mixture with a cookie scooper and put it into the hot oil. With a spoon, flatten gently. Make sure the skillet isn’t too full.

  • Flip and cook through on the other side once browned and crispy, approximately 2-3 minutes. Place the nuggets on a dish lined with paper towels after they’re done. Continue until you’ve finished all of your nuggets.

  • Serve with sour cream or guacamole right away!

  • This recipe should produce about 15 nuggets.
