Low Carb Chocolate Mousse

  • Using a hand mixer, beat the heavy whipping cream to soft peaks in a medium mixing basin. Remove from the equation.

  • Microwave the mascarpone cheese for 20 seconds in a large mixing basin. Hand-mix the ingredients.

  • Sift the cocoa powder into the mascarpone and stir in the liquid stevia using a hand mixer.

  • Fold the mascarpone mixture into the soft peaked whipped cream. Refrigerate for at least 2 hours or until completely cold.

  • Refrigerate for up to 1 week in an airtight container. Enjoy!
