  • Cooked chicken:For proteins and substances
  • Chicken broth: I prefer to Manischewitz low sodium chicken broth because it tastes like homemade.
  • Chili Lime Seasoning:This delicious condiment is back at Trader Joe’s
  • Smoked Paprika: For the taste of cooking with an open flame
  • Tortilla chips: For a better taste of corn
  • Cotija Cheese:A fantastic Mexican cheese that actually comes in a packet of grilled corn.

How to make Mexican corn soup

First, put olive oil in a large pan over medium-high heat. Add the onions, celery and diced carrots and cook for 3-4 minutes until they begin to caramelize. Then add the crushed garlic and fry for another minute or so. Do not add the garlic when you add the other vegetables, as it burns very easily. One minute is enough. Finally, add the frozen roasted corn, chicken breast, chicken stock, smoked paprika and chili lime seasoning. word-image-12593 At this point, it’s almost over. This Mexican street corn soup is inspired by the delicious corn sold on the streets of Mexico. Fresh steamed corn is drizzled with mayonnaise, then topped with chili and cotija cheese. For example, you can buy fresh mirepoix that has already been cut for you. I didn’t use this mirepoix for this recipe, but if you don’t have time, it saves time. It’s fresh, delicious and ready to go. The chili lime spice has long been a staple in my pantry, and I’ve used it in several recipes. The first taste is of lime, followed by chili. An absolutely fresh taste. It really is the perfect combination. And their Mexican grilled corn is just amazing. I have grilled corn myself for other recipes and I must say the taste is very similar. Cotija cheese is not easy to find, and thank goodness Trader Joe’s included a 2-pack with every package. If you don’t have a Trader Joe’s near you, you can substitute a few things. Instead of chili powder and lime, I would use chili powder, salt, and a fresh, well squeezed lime. Instead of roasting Mexican-style corn, you can also roast regular corn kernels over medium heat for 3 to 4 minutes until they begin to char. Then add more chili.   • 1 large escalope, hacked
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • Finely chop 2 cloves of garlic
  • 1 cup Trader Joes Mexican roasted corn
  • 1 cup bought Huhn, zerkleinert
  • Manischwitz Preferred Low Sodium Chicken Broth 32 oz
  • 1/2 teaspoon chili lime herb
  • 1/4 teaspoon smoked paprika
  • 10 Tortilla Chips slightly broken
  • 1 tablespoon Cotija cheese

Instructions

  • Place olive oil in a large saucepan over medium heat.  Then add the diced shallots, celery and carrots and cook, stirring constantly, for 3-4 minutes until lightly caramelized.
  • Add chopped garlic and cook for another minute.
  • Then add the roasted corn kernels, chicken, chicken broth, chili lime seasoning and smoked paprika.
  • Turn the heat down to low and simmer for 30 minutes.
  • Pour into bowls, top with tortilla chips and cotija cheese and serve.
