Pancakes are a classic breakfast treat and a favorite of all kids and adults alike. Most recipes call for some form of fruit, like blueberries, bananas, or apples, to be mixed in with the batter, but did you know that you can add fruit to pancakes without them ending up mushy or undercooked?

Ever since training for a marathon, I’ve been hitting the gym often. Tri-athletes are notorious for eating up a lot of calories, and I’m no exception. I’m the type of person that when I go to the gym, I’m in there for a good solid hour before I even think about eating. However, if you’re like me, you’ll know that those gym hours are often filled with delicious food!

Pancakes can be sweet, but waking up to a plate of delicious peach cobbler pancakes is even better. They have all the sameness of pancakes, but with a sweet and mild flavor that’s hard to resist.

I still remember the wonderful smell of cinnamon when it was cooked. She took them out of the oven and served them warm with cream on top, which softened the cookies and gave them a nice creamy flavor. So when I thought of this delicious apple pie, I wondered if I could get the same taste in pancakes. I tried them and my husband said he loved them, adding: This should be published on your blog. I generally stay away from pre-made mixtures, with the exception of a few brands that I know do not contain aluminum phosphate. In this recipe we used Trader Joe’s Buttermilk Pancake Mix, mostly because of the ingredients and because the pancakes are light, fluffy and absolutely delicious. And with the addition of peaches,cinnamon and a little butter….. welcome to a good old-fashioned peach cobbler.  Who doesn’t love peach pie? I had fond memories of peach pie as a child. My grandmother also made cobblers with her special cookie recipe.  Later my mother used Bisquick and I loved the taste of both. I also love this easy peach pie pancake recipe. Ingredients for peach pancakes

  • Buttermilk pancake mix: Trader Joe’s works very well
  • Cinnamon: Perfect spice for peach pie
  • Water: Mix it all together
  • Egg: For starter
  • Peaches: Star of the show
  • Ghee: For a high smoking temperature and a fatty taste

How to make a peach pie

First, it’s important that the pan is hot enough to cook pancakes in, so preheat the electric skillet or frying pan to 375 degrees. Then add the pancake mixture to the bowl.  Then add the water and egg and mix gently until a smooth dough forms. word-image-23 If you stir too vigorously now, the pancakes will become a bit stiffer and heavier.  Most importantly, they are light and airy. Then gently add the cinnamon and diced peaches. word-image-24 At this point, I prefer to let the dough rest for a few minutes. This makes the pancakes soft and tender. While the dough is resting, make sure the pan is hot enough. You can easily do this by adding a few drops of water to the pan. When the drippings crackle, your pan is ready. Then add the melted butter and spread it in the pan with a spatula. For each pancake, add a little less than 1/4 cup of the diced peach batter to the pan and cook for 1-2 minutes undisturbed. When bubbles appear on the pancakes, it’s time to flip them over and bake for another minute. word-image-25 Keep them warm in the oven until all the dough is used.  Then serve them with hot syrup. Note of ingredients

Like I said before, I try to keep the aluminum as far away from the food as possible. The verdict may not be in yet, but there are still too many examples of aluminum-related health problems.  So be careful with the ingredients in ready-made mixes. Two other brands of blends that I highly recommend are Bob’s Red Mill . You can also try Stonewall Kitchen’s buttermilk pancake mix. Both companies are excellent. It is up to you to decide if you want to remove the skin of the peach or not.  I cooked them both ways. If you want to remove the skin, there are two easy ways to do so.  First, cut the peel off with a sharp knife.  The only downside is that you lose some meat. The second method is to immerse the peaches in boiling water for 1 minute.  Then place them in a bowl of ice water for 1 minute. Ingredients

  • 1 3/4 cups buttermilk pancake mix We recommend Trader Joe’s or Bob’s Red Mill.
  • 1 cup of water
  • 1 egg
  • 3/4 teaspoon cinnamon
  • 2 cubes cubes cubes
  • 2 teaspoons ghee

Instructions

  • Preheat grill or electric griddle to 375 degrees. Also, preheat the oven to 125 degrees F.
  • Add pancake mixture to bowl. Add the water, cinnamon and egg and mix lightly until you have a smooth paste.
  • Add the diced peaches and mix lightly.
  • Check the pan by spraying it with water. When they are hot, the water droplets crackle. Now add the melted butter and spread it in the pan with a spatula.
  • Add a little less than 1/4 cup to the pan for each pancake. Fry the pancakes for 1 to 2 minutes until bubbly. Now turn them over and fry for another minute.
  • Place the cooked pancakes on a plate and keep them in the oven while you continue with the remaining batter.
  • Serve the pancakes warm with maple syrup.
