This fusion of cultures has led to an exceptional culinary experience with Cajun and Creole cuisine. In this jambalaya, I use shrimp, smoked chicken andouille sausages (which you can find at Trader Joe’s by the way…already cooked) and okra….. Very traditional, and I love it. And of course we have to add the holy trinity (as chief Paul Prudhomme calls it): Celery, onions and peppers. So let’s make a crab jambalaya.

How to prepare a Shrimp Jambalaya
Cooking jambalaya is very simple. I start with a roux, a mixture of flour and butter that I cook until brown. This roux not only makes the shrimp jambalaya thicker, but also more flavorful. Then I add the tomatoes, okra and herbs with the chicken broth. In traditional jambalaya, the rice is added at this point and steamed for about an hour. But this shrimp jambalaya is a little easier. I gave my husband the choice: Is the rice cooked in the jambalaya or as a side dish? He said he was definitely on the side. Especially since he’s a real rice purist. Small individual grains of perfectly cooked rice, not the sticky rice you get when you cook it in a sauce. And I agree. Therefore, this recipe serves rice as a side dish. Instead of a traditional jambalaya recipe that takes about an hour, this recipe takes about 30 minutes. - 2 bunches of smoked andouille sausage
- 1 can (14 oz) of low-sodium chicken broth
- 1 pound raw shrimp, peeled and deseeded
- Place oil in a large saucepan over medium-high heat. Add flour and cook until golden brown, about 3 minutes.
- Add onions, bell pepper, celery and garlic and saute until onions are caramelized, about 3-4 minutes.
- Add tomatoes, okra, thyme, oregano, Cajun seasoning, pepper, salt, andouille sausage and chicken broth. Stir and simmer for 30-35 minutes until sauce is slightly thickened.
- Add the shrimp and saute for 2-3 minutes until the shrimp are cooked.
- Serve alone or with cooked rice.
