This easy shrimp scampi recipe is savory, very tasty and very quick to prepare. It is ready to serve in less than 10 minutes . word-image-8019 I’ve loved scampi for years, and restaurants have prepared them in all sorts of ways. Some are good. Others less so, mainly because the cooks drowned the shrimp in the sauce. Yes, garlic butter sauce is good, but more is not always better – it’s just more. My favorite shrimp scampi was prepared at a small Italian restaurant in Phoenix called Fran’s, named after the owner’s daughter. Great memories of fantastic Italian cuisine. Each dish was unique and perfect. And Fran’s mother, Agnes, oversaw all aspects of the restaurant like a loving mother, personally greeting customers as they entered.  And the food?  Perfection in every dish. Your own recipes. And the Scampi was just like them. They knew how to cook shrimp. No more than about a minute on each side to keep the shrimp tender and juicy. And the garlic, lemon, butter and wine sauce was rich and decadent and just right. Unfortunately, Fran’s is no longer in business, but the family business continues. If you’re ever in Phoenix, be sure to visit Mancusos Italian Restaurant. This is Northern Italian cuisine at its best. I hope this scampi recipe gives you an idea of the scampi I tried at Fran’s. word-image-8020 word-image-8021
