Soaking and fermenting grains reveals their nutritional properties and allows them to be absorbed more easily (source). Which type of starter should I use?
Any wheat or rye leaven can be used for this fresh pasta recipe. It’s very flexible. I like to use a sourdough that is half rye and half whole wheat. The sourdough does not need to be active for this recipe. Chilled sourdough from the fridge works well. A freshly incubated live sourdough is also good. It is best to have a starter that is 100% hydrated. If your sourdough is wetter, just add more flour.
What is the best flour for rising pasta?
For pasta, you need flour, which contains more gluten. This will make the dough firmer and will stiffen up better. I like to use red or white durum wheat flour. To roll out the pasta dough, I prefer to use white, unbleached flour.

Preparing the pasta input

- In a large bowl, mix the eggs, salt and sourdough until well blended.
- Gradually add the flour and knead until the dough forms a ball.
- Cover the dough and let it ferment for 7 hours on the counter or overnight in the refrigerator.
- Roll out the dough on a floured work surface. If you use a pasta machine, keep using it to make pasta. If making the dough by hand, roll it out to the desired thickness. Use a knife or pizza cutter to slice the pasta.
- Bring 4 litres of water to the boil with salt to taste.
- Add 1/4 of the pasta at a time and simmer for 3-5 minutes.
- Carefully remove the pasta from the water and drizzle with a little olive oil before serving with your favorite sauce.
How to store sourdough
If you don’t want to make pasta very fresh right away, there are several ways to store it. Drying, cooling and freezing are all suitable, depending on the desired shelf life. Drying paste is a good choice for long-term storage. Freezing also allows the product to be stored for up to 3 months. For short-term storage, it is best to use a refrigerator.
How long does it take to dry the noodles before fermentation
To dry the pasta, dip it in flour and then spread it on a baking sheet or hang it on a pasta drying rack. Allow the paste to air dry for 12 to 24 hours. Once dry, store the paste in an airtight jar.
Chilling and freezing pasta
To cool, roll the pasta in a generous amount of flour and place in a container with a lid. They can be kept in the refrigerator for up to a week. To freeze pasta, sprinkle generously with flour and place in a covered container. The pasta can be frozen for up to 3 months.
